- 3-4 cloves of garlic (minced)
- 1 Chili pepper (sliced)
- 3 Egg yolks
- 2 eggs
- 6 cups leftover rice
- 2 Tbsp MSG
- 4 Tbsp butter or pork fat
- 3 Tbsp Soy Sauce
- 3 tsp White Pepper
- 3-4 Green Onions (sliced)
- Tahdig

- In a pan on medium high heat, add 1 tbsp pork fat or butter and toss in ⅕ of your rice, pressing down and letting it get crispy to make tahdig.
- In a wok, heat 1 tbsp of pork fat or butter and coat the entirety of the wok.
- In a bowl, scramble your eggs and yolks and season with 1 tsp of white pepper.
- Pour into wok and cook on medium heat, mixing constantly to break up into smaller pieces.
- Add in chili pepper and 2 cloves of minced garlic.
- Mix and fry until aromatic.
- Add in the rice and add MSG, soy sauce, green onion, white pepper and your tahdig crispy rice.
- Mix and fry until combined, plate, and top with more green onion. Uncle Roger approved!
